From The Test Kitchens Of The Cave Of Cool

 
I usually like to get the day old roast half chickens at the Sobey's. They are cheap and great cold chicken to snack on. Never too greasy which as you know is the worst thing about day old chicken....or it CAN be. Today I got a bad one. Too slick and greasy. Rare for the Sobey's. So I decided it needed to go in the slow cooker with a bunch of leftover vegetables and mushrooms and spices and green onions and cucumber and egg noodles and shrimps. Then a can of mushroom soup and boom...A GUMBO was born.
 
I should have not made this post because as we all know that the first rule of Gumbo is that one does not talk about Gumbo. Or cornbread which will be awesome with day old Gumbo. Nothing better than day old Gumbo when all those ingredients have time to mix together.
 
There is a meat and tomato version of Gumbo but we call that Chuckwagon Diner. I can't talk about that either.

Leftover rotisserie chicken is AWESOME to cook with, and where I'm from, rotisserie chickens are often a loss leader in stores (which means, they're always REALLY cheap -- a whole, cooked chicken for five bucks). It's not a bad idea to buy one, refrigerate it overnight, and then use the meat for something else. And then you can toss the carcass in a crockpot with some cut-up onions, carrots, and celery with enough water to cover, put the pot on LOW for twelve hours, and then strain it for stock that's so much better than anything from a can. Yeah -- I'm a fan of rotisserie chickens. In fact, as I write this, we're reheating one in the oven!

I love to stop at the deli for that very reason. That crisply skinn and great spices works for me.

What happens in Gumbo stays in Gumbo...but then you get to eat it!
I agree about rotisserie chicken. When Husband was in the army and
we had no money, a whole barbequed chicken from the grocery was a huge treat for us. If we could add some Cold Bear wine (well, we were 25!) it was as close to heaven as made no difference.
